I had never made chicken cacciatore before I discovered a recipe for it in the Candida control cookbook by Gail Burton. It was one of the first recipes that I tried in the cookbook because it seemed very simple, as it required very few ingredients. I am so glad that I tried this recipe because it has become a staple dish in my house. Everyone in my house enjoys this chicken, even my oldest who is currently in a no chicken phase will eat this without a single complaint. I have to admit that I did feel a bit awkward pouring tomato sauce over bone-in chicken because I was used to using tomato sauce exclusively with boneless skinless chicken breasts. I am glad however that I was able to push passed my reluctance because once I tasted this dish my only regret was that I had not experienced chicken cacciatore sooner.
After a little bit of digging I found out that chicken cacciatore is a classic Italian dish but many of the recipes that you will find for chicken cacciatore require a whole lot of ingredients, many of which are not yeast free. Gail Burton’s candida diet version of chicken cacciatore is so simple, yet still so tasty. I believe that there is really no need for anything else. Adjusting to candida diet cooking by adapting recipes is difficult, so when I actually come accross a simple recipe that is naturally candida diet friendly I run with it and pray that everyone in my house will eat it.
Yeast Free Easy Chicken Cacciatore Ingredients
3 pounds chicken quarters, legs or thighs skinned and boned
2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon sea salt
4 clove garlic chopped
4 tablespoon fresh oregano chopped
4 tablespoon fresh basil chopped
2 cans (24 ounces) tomato sauce (I use 1 container of Pomi Strained Tomatoes which contain no citric acid)
Yeast Free Easy Chicken Cacciatore Directions
Preheat oven to 400 degrees Fahrenheit
Grease large baking dish with olive oil

Place chicken in greased baking dish
Sprinkle chicken with sea salt and garlic powder
Place in preheated oven and cook for 40 minutes turning chicken half way through
Combine tomato sauce, oregano, basil and garlic in a medium bowl and stir

Pour tomato sauce mixture over chicken
Turn chicken and then bake for 30 additional minutes until tender
