Yeast Free Guacamole – Candida Diet Recipe

Candida Diet GuacomoleAvocados are a bit of a new obsession for me as I only just started eating them in the past few years.  My aversion to avocados was caused by my inability to choose ripe ones.  I would diligently try to choose the perfect avocado at the farmer’s market but would always choose ones that were way too hard.  I would wait for them to ripen but would then forget about them and allow them to rot.  This was extremely frustrating and I would be so angry about the money I had wasted.  Avocados are not cheap.  On most visits to the market I find them for $2 to $3 a piece.

Fortunately, everything changed when my friend/neighbor Dominique and I started shopping together for a few months.  Dominique loves avocados and we started to frequent the farmer’s market together.  He taught me how to pick out the perfect avocado and I am happy to report that I am now a pro.  This is not an easy skill so if you have not mastered it do not give up.  I am frequently approached by people in the market that want to know how to pick a ripe avocado.

Avocados are okay to eat on the candida diet and have many health benefits.  If I am in the mood for an avocado I usually just slice one and add it to my salad or another one of my yeast free dishes. My favorite thing to do with avocados is make guacamole.  I am happy and truly surprised to share with you that my guacamole has become a favorite at work.   I have been caught whipping up batches of guac in the kitchen at work on numerous occasions.  I have tried many guacamole recipes but in the end I stuck to a very basic recipe.  Depending on your taste you may want to add other ingredients.  Guacamole should be enjoyed as soon as it is made as it will start to turn brown when exposed to the air.  Placing an avocado pit in the guacamole and covering the bowl until ready to serve may help delay this reaction.

Yeast Free Guacamole Ingredients (Makes 2 servings)
1 ripe avocado
1 tablespoons chopped fresh cilantro
1/2 vine ripe tomato
sea salt to taste
black pepper to taste

Yeast Free Guacamole Directions
In a bowl with cover mix together avocados, tomato, cilantro
Add sea salt and black pepper to taste and mix
Cover and refrigerate to allow flavors to mix
