I finally managed to get up before 6 AM this morning and it felt really good to be up and about that early. I was finally not rushing out of the door and got everyone to school with all of their belongings on time. I wanted to exercise but I took the time to do some cooking for the day. Yes, I baked chicken at 5:30 AM so that the baby and I would have a healthy lunch. This really is not a choice when you are trying to follow a candida diet and cater to multiple food allergies. I have to cook ever single day or we will not eat. Despite my mistakes on the candida diet I am proud that I have really kept the kids on track with their diets ever since they were diagnosed in November. Of course there were some mistakes made because I did not realize that the ingredients in a particular food were either made of or derived from corn or soy. Corn and Soy is in Everything! I tried using an egg replacer only to find out later that it had corn in it. I immediately looked for an alternative and discovered flaxseed meal. Despite these honest mistakes I have not faltered on wheat, eggs, pork, beef and shell fish and these were staples in our diet before the diagnosis. This gives me a feeling of accomplishment, as it is not easy adjusting to these changes and kids are so picky about their food. Now I just have to turn some of this attention to myself and make sure that I take care of my dietary needs.
I feel really good this morning. It feels as if so much of the junk food that I had been eating has finally left my body. I am looking forward to continuing to feel better over the coming days. One day at a time is about all I can and want to handle right now. There is a lot of stuff going on in my house and I am trying not to let my emotional stuff lead me to eat poorly. I am trying to focus on regaining my health so that I am better equipped to handle things as they come. I am really excited about tonight’s menu. I am going to try chicken fajitas. I am a big fan of fajitas but this will be the first time I am preparing them for my children. They will be complete with all of the candida fixins and I will post the results. Have a great day!

Breakfast
2 Boiled Eggs sea salt and pepper
1 cup of herbal tea with 1 pack of stevia
Oatmeal with organic brown sugar for the kids
Mid-Morning Snack
Cucumbers with sea salt
Lunch
Baked chicken, rice and beans
Gluten Free Macaroni and Cheese and Spinach for my oldest
Afternoon Snack
Bag of Cape Cod Potato Chips
2 cups of air popped popcorn
Dinner
Chicken Fajitas
Dessert
1 cup or herbal tea with stevia








I m pure vegetarian, what should i do if i want to do Candida Diet.
You can still do the candida diet but just have to look for vegetarian recipes that are candida diet friendly. I hope to post more vegetarian recipes in the coming weeks. Thanks for stopping by please check back again.
