Remember the days when one bag of all purpose flour was sufficient to have in the kitchen? Those days are long gone for many of us and today you will find at least 10 types of exotic gluten free flours and starches in my refrigerator. Everything from potato flour to tapioca starch. A year ago I knew very little about mixing gluten free flours to create something that resembled a wheat texture. I am happy to report that today I am finding my way around my gluten free yeast free kitchen pretty well.
There are many all purpose gluten free flours out there that are okay for the candida diet but not all of them work for my household. In addition to trying to follow the candida diet I have to manage my children’s multiple food allergies which include but are not limited to wheat, soy and corn. Soy and corn ingredients are very popular in gluten free flour mixes. I did manage to find one brand of all purpose gluten free flour without soy or corn. It actually had garbanzo flour (chickpea flour) in it. I was thrilled to find the convenience of one bag of flour but not so thrilled with the taste. All purpose to me implies that you can use it for everything but when I used this flour to make things like pancakes it tasted like beans. I do not know about you but I do not enjoy tasting beans when I am eating pancakes.
So I have given up on finding a commercially available gluten free flour mix that can be used for all of my cooking needs. I have however found a simple and tasty recipe that works well in everything that I have tried it in. I have made pancakes with this mix that can pass for wheat ones and pie crust for a pot pie that was had a delightful texture and taste. There is no funky aftertaste with this mix and it really seems to function like regular all purpose flour. If you have been struggling to find a good gluten free all purpose flour mix give this one a try.
Yeast Free Gluten Free All Purpose Flour Mix Ingredients
2 cups Brown Rice Flour
2/3 cups potato starch flour
1/3 cup tapioca flour
1 teaspoon guar gum (Xanthan gum will work too. I use guar gum due to a corn allergy)
Yeast Free Gluten Free All Purpose Flour Mix Directions
Mix all ingredients together thoroughly to ensure equal distribution of ingredients
You can sift all ingredients together if you are worried about proper distribution
Store flour mix in an airtight container in the refridgerator until ready for use
You can use this mix in all recipes that call for all purpose flour or gluten free flour
