Yeast Free Teff Flour – Candida Diet Product

Do you know what the tiniest grain in the world is?  Don’t worry, I didn’t know either but it is Teff and it makes a great yeast free gluten free flour to use on the candida diet.  Teff is an ancient grain native to Ethiopia where it has been used as cattle feed and part of building materials for centuries.  Today in Ethiopia it is milled into flour and used to make injera, a type of flat bread.  It is also used to make porridge and an an ingredient in alcohol.

Although teff flour has gone pretty much unrecognized in the United States it is currently gaining popularity due to the growing incidence of gluten allergies/sensitivities, celiac disease and candidiasis, in which treatment includes eliminating or significantly reducing gluten intake.  Teff is praised is widely praised because it is a gluten free flour but it is also yeast free and a nutritional powerhouse.  Teff has a superior nutritional profile to other flours, as it is a great source of dietary fiber, protein and iron.  Teff is also a significant source of calcium.  With all of these nutritional benefits and a slighter lower carbohydrate count teff flour is a great choice for the yeast free diet.  It is suggested that you substitute about 25 percent of the flour required in a recipe with teff.
