I am sorry there is no picture of these rolls. I honestly forgot to snap one before we ate them all. I was very skeptical when I first saw this recipe in The Candida Control Cookbook by Gail Burton. I have had a lot of trouble with bread and roll recipes as most of the yeast free ones that I have tried have come out really gross. Despite my reservations I was stilling hoping to find a roll that I could enjoy so I attempted this recipe and I am very thankful that I did. I don’t make these rolls often but they are very easy to throw together. You can even freeze them and reheat as needed. I was just happy to have this recipe for Thanksgiving. It was really nice to having a roll on my plate next to my turkey.
Yeast Free Sesame Rolls Ingredients
2 tablespoons butter (will clarify during process)
1/4 cup sesame seeds
1 and 3/4 cup cups brown rice flour
1 tablespoon baking powder
1/2 teaspoon sea salt
2/3 cup yeast free milk (Use soy, almond, hemp or lactose free)
2 large eggs
Yeast Free Sesame Rolls Directions
Preheat oven to 400 degrees Fahrenheit
Melt butter in a small skillet
Skim white residue from melted butter and disgard to clarify
Add sesame seeds to skillet and saute seeds until lightly browned
Cool and set aside
In a large bowl combine dry ingredients (flour, baking powder and sea salt)
Mix thoroughly and then add milk
Separate eggs placing egg yolks in one bowl and egg whites in another
Beat egg whites until stiff and fold into the flour mix
Lightly beat egg yolks and set aside
Combine all ingredients using hands to form dough
Roll dough into 3 inch balls and flatten
Dip each roll into yolk and then sesame seeds
Place rolls on non stick baking pan or spray baking pan with cooking spray
Bake approximately 15 minutes

>I hope that everyone had a lovely Thanksgiving. I figured I would do a bit of a write up on my Yeast Free Green Bean Casserole since I didn’t have time to do it yesterday. As I sit here at 9:00AM the day after Thanksgiving enjoying leftover turkey and green bean casserole I am thrilled all over again at how good this dish came out. This is my first time making green bean casserole so I cannot compare the taste to that of the traditional one that most people make using Campbell’s Condensed Cream of Mushroom Soup. I can however say that this is an extremely tasty dish and it was very well received by my guests for Thanksgiving.
Since mushrooms may be problematic for candida dieters I used homemade yeast free cream of chicken soup instead of cream of mushroom. This is a recipe that I had used earlier this year to make a yeast free chicken and rice bake and I was really happy that I already had this recipe on hand. I did use canned string beans to save some time but I will try it using fresh green beans next time. I used the Nature’s Promise brand from Stop & Shop and ingredients included sting beans, water and sea salt only. I made my own Yeast Free French Fried Onions the night before and these came out great. If you look forward to green bean casserole during the holiday season but still want to adhere to the candida diet this recipe may be worth a try.
Yeast Free Green Bean Casserole Ingredients
Yeast Free Condensed Cream of Chicken Soup
1/2 cup milk (I used Lactose Free Milk)
1 teaspoon Bragg Liquid Aminos
Dash ground black pepper
4 cups cooked cut green beans
1 1/3 cups Yeast Free French Fried Onions
Yeast Free Green Bean Casserole Directions
Stir the soup, milk, Bragg’s, black pepper, beans and 2/3 cups French Fried onions in a 1 1/2-quart casserole.
Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.
Bake for 5 minutes or until the onions are golden brown

A trip to Trader Joe’s a few weeks back inspired me to make these yeast free French Fried Onions. Trader Joe’s has a counter where they encourage customers to sample their products and they were serving these onions on top of their version of traditional green bean casserole. I was a little intimidated at the thought of making these because my previous attempt to fry onions to make yeast free onion rings had failed miserably. Fortunately, I found a great recipe for homemade French Fried Onions that was easy to follow and the results were incredible. I could not stop eating these as I was frying them late last night. I was kind of awe as I pulled each and every onion out of the fryer. It never dawned on me that I could make my own French Fried Onions as the cans seemed to be such prominent fixtures in the Supermarket during the holiday season and I just assumed this was something that would be too tedious to recreate. Believe it or not these were really easy to throw together. I must warn though that for good results these do require patience. Coating each onion with the flour mixure and waiting for the onions to brown takes patience and certainly requires more effort than just picking up a can but most good things do. I am anxious to use these today to make my yeast free green bean casserole.
Yeast Free French Fried Onions Ingredients
3 large onions, sliced into thin rings
1 and 1/2 cups yeast free milk (I used lactose free milk)
1 egg
1 and 1/2 cups yeast free gluten free flour mix
sea salt
canola oil
Yeast Free French Fried Onions Directions
In a large bowl mix egg in milk
Soak the onions in the milk-egg mixture for 5 minutes
Heat oil in a large skillet or deep fryer
Mix flour and sea salt in a bowl
Take a handful of onions and run them through the flour with a fork to coat
Fry in batches in the oil, stirring as needed to brown evenly
Drain on paper towels
Store in an air-tight container

I have been saying for a long time that without preparation sticking to the candida diet is nearly impossible. Getting prepared just to execute your weekly meals is often a challenge and if you are trying to execute an entire yeast free feast this Thanksgiving my advice is to start now and do as much prep work as possible. Without preparation cooking on Thanksgiving will most certainly be frustrating and exhausting and that is not how I plan on spending my Thanksgiving. That is why I am starting today. If I prepare just a few things today and tomorrow it will make Thursday go so much smoother. What we have to remember and what I often forget is that we are making almost everything on our menus from scratch and that takes time and patience. So if you are undertaking this task be kind to yourself and start early. Today I will be making my mayonnaise, hummus and salsa. All of these keep well in the refrigerator and it will save me so much time on Thursday. So stop reading this and start cooking.

Here’s my Yeast Free Thanksgiving Menu for 2010. I am excited yet nervous about executing this feast. Many things I have tried before and I have pretty much mastered but some things on the menu are new. I just hope everything comes out okay and my guests are not disappointed. My menu is admittely carbohydrate heavy but it I am going to be serving a variety of vegetables to hopefully even things out a bit. Remember that just because it is yeast free does not mean that we can eat unlimited amounts of everything. I may not be able to have a whole baked sweet potato and a serving of mashed potatoes, as a half of serving of each would probably be more appropriate. Loading up on those veggies is also going to be important for me. I still have not finished food shopping as I fell ill today and have been trying to get some rest so that I am well soon and will be able to cook this Thanksgiving dinner. More yeast free Thanksgiving excitement to come soon.

>It’s time for the big show. Thanksgiving week is upon us and there is so much do get done before Thursday. I was absolutely delighted to pick up my free turkey today from Shoprite today. I don’t think I have ever paid for a turkey, as I have always just taken the free one that the store offers when you spend enough cash there and I always do. I have found however that some people are very particular when it comes to their turkey and will only eat certain brands but this is never an issue for us. Well whatever turkey you prefer this is the week to show off you turkey cooking skills.
I am thrilled to be at home cooking this year. This will enable me to control the entire menu and make everything candida diet friendly. I am still working on the particulars of my Yeast Free Thanksgiving menu but I am very excited and will finish food shopping tomorrow. I want to get to the store before all the crazy last minute shoppers come out (I am usually one of them). I have a good approach mapped out in my head to make most of my traditional Thanksgiving dishes yeast free but I am pretty certain that I won’t be able to pull off stuffing. I have tried to make gluten free yeast free stuffing and it has yet to work out. To be honest I am afraid to try again. If anyone has found a good gluten free yeast free stuffing recipe please share it. I love stuffing and it will be missed. I am also struggling with the fact that there will be no baked macaroni and cheese. This is a staple at our holiday dinner table but it is impossible to make yeast free.
I am sure everything will be fine and there will be a variety of tasty offerings. I will try my best to get recipes posted as I make them. If you are trying to stay yeast free during Thanksgiving I commend you and wish you the best of luck. You can do it!

>I really love Greek food so this recipe really does mean a lot to me. I was introduced to Greek food about 3 or 4 years ago and I have tried a variety of staples offered at the Greek restaurant since, such as spanakopita, moussaka, gyros ang Greek salad. My favorite dishes seem to be the hummus and the souvlaki platters and pitas.
I was starting to crave Greek food from my favorite Greek restaurant, George’s Cafe and Grill in Ridgefield Park, NJ. Although they have some of the best food I ever tasted it is not at all yeast free. This got me thinking about making a yeast free version of my favorite Greek dishes. I already make a pretty good humus so now I just had to figure this souvlaki thing out. I found a good recipe to help me along and my family and I enjoyed a splendid Greek meal yeast free. If you enjoy Greek and have been missing it on the Candida diet give this recipe a try.
Yeast Free Chicken Souvlaki Ingredients
Souvlaki
3 tablespoons fresh lemon juice
1 1/2 teaspoons chopped fresh oregano
2 teaspoons olive oil
1/2 teaspoon sea salt
4 cloves garlic minced
1/2 pound skinless, boneless chicken breast, cut into 1-inch pieces
1 medium zucchini, quartered lengthwise and cut into (1/2-inch-thick) slices
Cooking spray
Tzatziki Sauce
1/2 cup peeled cucumber shredded
1/2 cup plain usweetened yogurt
1 tablespoon lemon juice
1/4 teaspoon salt
1 clove minced garlic
Yeast Free Chicken Souvlaki Directions
Combine the first all ingredient except chicken and zucchini in a coverable bowl.
Mix ingredients together thoroughly and then add chicken to bag.
Cover bowl and shake while holding the top to coat chicken.
Marinate chicken in refrigerator for at least 30 minutes.
Thread separate skewers with zucchini and chicken.
Pre-heat the broiler and spray broiler pan with cooking spray.
Add zucchini and chicken skewers and cook 8 minutes or until chicken is done, turning once.
To prepare tzatziki sauce, combine cucumber, yogurt, 1 tablespoon lemon juice, 1/4 teaspoon sea salt, and 1 garlic clove minced, stirring well. Serve the tzatziki sauce with souvlaki.

After spending all day at a cheerleading competition I didn’t feel much like cooking last night, so I didn’t. I was about to fall into the fast food trap but decided to have my daughter call Nana on the way home to see if she had cooked anything for dinner. Nana doesn’t adhere to the candida diet but I figured a home cooked meal even if not completely yeast free had to be better than Wendy’s. Fortunately, she had cooked and had enough leftovers to feed us. The best thing was that the meal was completely yeast free. Nana’s baked chicken, brown rice and string beans tasted like a gourmet meal and I was able to go on with my night guilt free. Thank God for Nana, she really saved the night.
After messing up my Tilapia with Crab and Avocado Salsa last Monday I kind of struggled through the week. I hate when a recipe goes wrong. I just keep thinking about all of those ingredients I wasted. Overall I really did do much better last week but I chose to eat a few things from the cafeteria due to lack of preparation. I usually get soup and salad from the cafeteria on those days when I don’t have a lunch prepared. I create my own salad dressing with olive oil, lemon juice, salt and pepper. Although this may not sound too horrible I know that the soup is more than likely not yeast free. I try to choose the soup that I feel has the fewest candida diet offensive ingredients but I am sure that it is not completely yeast free.
I am going to keep things real simple this week using some of my favorite staple meals to get by. There is a lot going on right now for me personally so I need to simplify some aspect of my life. I hope you all have a fantastic week.

>The only reason that I even attempted this Yeast Free Maryland Crab Soup recipe was because of my huge failure with last weeks’ tilapia recipe that I was so excited about trying. Tilapia with Crab and Avocado salsa was so gross. So gross that I can’t even post the recipe. After that fiasco I had quite a bit of lump crab meat leftover and I wasn’t sure how best to use it. I automatically thought about crab cakes, which I love but after reviewing a few recipes I decided that crab cakes would require more work than I was willing to do. Then I thought soup. Soups are usually easy enough so I went in search of the perfect crab soup recipe.
After a little searching I found this Maryland Crab Soup recipe on About.com. To be completely honest I chose it primarily because I had most of the ingredients on hand. This recipe was also very candida diet friendly in its original form so I only needed to changeand/or omit 3 ingredients. This soup was delicious and I am looking forward to making it again and again.
Yeast Free Maryland Crab Soup Ingredients
1/4 cup onion chopped
2 stalks celery chopped
1 clove garlic minced
2 tablespoon olive oil
1 tablespoon Old Bay seasoning
1/2 teaspoon ground black pepper
1 tablespoon lemon juice
1 quart unsweetened chicken broth
3 cups water
2 red potatoes cubed
1/2 cup frozen lima beans
1 cup frozen green beans
1/2 cup frozen corn
1 container Pomi Chopped Tomatoes
1 pound lump crab meat
Yeast Free Maryland Crab Soup Directions
In a large pot, saute onions, garlic and celery in olive oil.
Add Old Bay seasoning. ground black pepper and lemon juice.
Stir until vegetables are well coated with spices.
Add all other ingredients except crab.
Simmer over medium heat for about 50 minutes or until potatoes are tender.
Stir in crab meat and simmer for 10 additional minutes.

Things are still pretty hectic but I tried to use this weekend to regroup since the girls where with dad over the weekend. Last week was really tough for me because I was mostly worrying myself sick about finances. The company that I am contracting with is requiring that all contractors take the week between Christmas and New Years off this year. Even though it was going to be hard missing a week’s pay I was looking forward to spending this time with my children. I was really trying to have a good attitude and make the best of things. I say try because on Friday I got a call from my boss saying that contractors are required to take another 4 days off in December in addition to the week that we are already not able to work. So the company is proposing that I just do without 2 weeks of pay during the holiday season. I tried not to be angry but I was and still am. I did let worry get the best of me and in my depressed state I ate terribly yesterday. I did start to feel better however when I started to think of solutions to my December issue. I will discuss these possible solutions with my boss tomorrow and hopefully we can figure something out so that I can make it through December financially.
Besides my two indiscretions things have been going pretty well candida diet wise over the last two weeks. I am happy to be starting this week with yeast free menu on hand and I am fully prepared to execute it. I also found a brand new tilapia recipe and am very excited about trying it this week.
