Vegetable of the Month Zucchini

There are three food groups that we focus on when following a candida diet.  Those groups are meat, non-glutinous grains, and vegetables.  While I have no problem eating meat and enjoy all grains gluten or not, my vegetable intake is lacking.  I really feel bad about this because I know that the health benefits of vegetables are immense.  Vegetables provide essential vitamins and minerals to keep the body functioning at an optimal level.  Optimal body functioning is exactly what we need when fighting candida.  Additionally, consuming certain types of vegetables can reduce your risk of heart disease, cancer, high blood pressure, and diabetes.

While I realize the importance of vegetables, they are often forgotten in my meals.  I can’t tell you how many times I finish preparing a meal and then realize that it does not include vegetables.  I try to keep frozen vegetables around to add quickly to meals but I have not done this consistently.  In an effort to start focusing meals around this very important food group I will be choosing a vegetable of the month to create candida diet meals around.  I am hoping that shaping recipes around particular vegetables will help me to make them a more consistent part of my diet.  If you have any candida diet appropriate recipes that utilize the vegetable or the month please feel free to reach out.

Vegetable of the Month Zucchini – May 2013
The vegetable for this month will be zucchini.  Zucchini belongs to a group of vegetables known as summer squash.  Zucchini provides minerals such as manganese, potassium, magnesium, and calcium.  It also is a good source of vitamins A, B, C, E, and K.  The low calorie and low carbohydrate profile of zucchini make it ideal for the candida diet, especially stage 1.

There are a few  recipes on Yeast Free Living that include zucchini.  My favorite zucchini recipe is actually zucchini noodles.  I almost feel that there is no need for pasta after discovering how to make noodles out of zucchini.  If you have not tried it yet I encourage you to do so.  I am looking forward to adding more zucchini recipes during May.  If you have any candida diet zucchini recipes that you would like to share please contact me at tennille@yeastfreeliving.com.
