Sandwiches are such a wonderful invention. There are endless possibilities for creating tasty and filling sandwiches and the convenience of being able to hold an entire meal in your hands is terrific. Unfortunately, enjoying a sandwich on the candida diet can be complicated. Sandwiches are not sandwiches without bread and finding a candida diet friendly bread substitute can be difficult. I have learned to live without bread for the most part. If I want to enjoy sandwich type fillings, I usually do so on lettuce wraps or rice cakes. On occasion I will eat a slice of all natural sourdough bread. I buy this bread from Whole Foods or Trader Joe’s. It contains very few ingredients and no yeast. While I have found bread substitutes that I enjoy, my favorite way to enjoy the sandwiches that I once ate is to transform them into salads.
This past weekend I just happened to be craving a BLT. A typical BLT consists of five ingredients bread, bacon, lettuce, tomato, and mayonnaise. The ingredients seemed basic enough and already salad friendly. I of course had to add cucumbers, as they are my favorite salad ingredient. My eldest daughter and I devoured this Yeast Free BLT Salad. This salad totally satisfied my craving and I didn’t miss the bread at all.
I do consider this recipe a small cheat. I could not find any bacon that did not contain sugar. I used Applegate Uncured Turkey Bacon which has maple sugar listed as one of the ingredients. The good news is that the amount of sugar is so small that the nutritional information provided actually indicates that it contains 0 grams of sugar. Fortunately, I have been able to enjoy this bacon on occasion with no ill effects. If you are in stage 1 of the diet or are still extremely sensitive to even small amounts of natural sugar, then I urge you to proceed with caution. This is a good salad but don’t want you to get sick.
I tried this Yeast Free BLT salad using both mayonnaise and yogurt as dressing. While the mayonnaise really makes the salad more BLTish, using plain unsweetened yogurt was still pretty good. Sometimes I just don’t have any yeast free mayonnaise prepared or just don’t feel making it. Being able to substitute yogurt in a pinch is really helpful.

Other Recipes That You Will Need to Make Yeast Free BLT Salad
- 1 package bacon (6 to 8 ounces)
- 1 head romaine lettuce, shredded
- 2 large tomatoes, chopped
- 1 cucumber, peeled and chopped (optional)
- ½ cup yeast free mayonnaise or plain unsweetened yogurt
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- In a large frying pan cook bacon according to package directions
- While bacon in cooking shred lettuce, chop tomatoes, and peel and chop cucumbers
- In a large bowl combine lettuce, tomatoes and cucumbers
- In a small bowl combine mayonnaise or yogurt with garlic powder, salt and black pepper
- Once bacon is done let cool on paper towel lined plate
- Cut bacon into bite sized pieces
- Add bacon and mayonnaise or yogurt mixture to salad
- Toss until evenly coated
