This Yeast Free Quinoa with Kale and Tomatoes combines several of my favorite candida diet foods.   My cooking skills are pretty basic.  I had to adopt a learn as you go approach after relying so heavily on creating meals from boxes and cans for so long.  This required quite a bit of patience and I continue to learn more and more about preparing real food every day.  After over six years of experimenting in the kitchen with yeast free recipes there are a few ingredients that I know will never let me down.  When trying to figure out how I should combine quinoa and kale I decided to use my favorite ingredients and hope for the best.

Once again my staple ingredients did not let me down.  This Yeast Free Quinoa with Kale and Tomatoes combines the simple yet rich flavor of onions, garlic, salt and ground black pepper to create this tasty side dish.  This yeast free recipe is super easy to prepare and contains healthy ingredients.  I added a lot of garlic to this recipe because I love garlic.  Besides garlic is a natural antifungal which helps to combat candida so I eat it as often as possible.  You can use less if you prefer.

Ingredients
  • 1 cup quinoa, cooked
  • 1 tablespoon olive oil
  • ¼ medium yellow onion,chopped
  • 5 cloves garlic, chopped
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 1 bunch kale, thick stems removed and leaves chopped
  • 1 cup yeast free vegetable broth
  • 1 cup canned chopped tomatoes
Instructions
  1. Cook quinoa according to package directions and set aside
  2. Heat oil in a large skillet over medium-high heat
  3. Add onion, garlic, salt and pepper
  4. Cook, stirring occasionally until onions and garlic begin to brown, about 5 minutes
  5. Stir in kale and cook, tossing frequently, until tender, about 3 minutes
  6. Stir in tomatoes and broth and cook until tomatoes begin to soften, about 2 minutes
  7. Stir in quinoa and cook until heated through
