Yeast Free Broth
Flavorful unsweetened yeast free broth is the cornerstone of my favorite yeast free recipes.  I made this yeast free vegetable broth because I found that vegetable broth is the easiest broth to make.  When I first started this site I was determined to find a store bought chicken and beef broth that was appropriate for the candida diet.  I was able to find a few meat broth brands that were unsweetened but even the brands that boasted “organic” and “natural” contained unhealthy additives.  I was heartbroken by this discovery and resolved to make my own meat broth.
I searched for quick and easy chicken and beef broth recipes to adapt for the candida diet, but this too was in vain.  All of the recipes that I found required too many ingredients or required more time to prepare than I was willing spend.  Until this time I assumed that you needed different types of broths for different recipes.  Thankfully a quick search for vegetable broth recipes proved to be the only broth I needed.  I now use this broth for many of my yeast free recipes.  Making vegetable broth is super easy and naturally yeast free.  I make this broth in large batches and freeze in 1 to 2 cup portions to use as needed in my yeast free cooking.

Ingredients
  • 8 cups filtered water
  • 1 large yellow onion, coarsely chopped
  • 2 carrots, coarsely chopped
  • 2 stalks celery, coarsely chopped
  • 5 cloves garlic, chopped
  • 2 bay leaves
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
Instructions
  1. Place all ingredients in a large stock pot
  2. Set stove to medium high heat and bring to a boil
  3. Once boiling cover and reduce heat to low
  4. Let broth simmer for 1 hour
  5. Strain out vegetables and bay leaves
  6. Use immediately or freeze for later use
